Tlahco in Santa Rosa: A Fresh Take on Tacos on Day 3 of #HispanicHeritageMonth Series

On the third day of our Taco Series adventure, we stumbled upon Tlahco right by SRJC in Santa Rosa, CA. Fun fact: ‘Tlahco’ is believed to be the original Aztec term for taco. While they weren’t officially open yet, the stars aligned, and the owner recognized me, inviting us in for a private tasting ahead of their opening.

Cafeteria Style Eating

The setup inside was reminiscent of Chipotle, but that’s where the similarities end. Tlahco is authentic to its core, with meats displayed enticingly and prepared with care and tradition. What caught my eye was the Al Pastor rotating on a rotisserie at the back. The crunchy tacos we tried were loaded, messy, and oh-so-delicious. While every meat variant had its charm, the Al Pastor stood out with its sweet taste, especially when paired with their spiciest salsa.

Their Salsas

Their salsas, particularly the spiciest one, added that fiery kick, balancing the sweetness of the Al Pastor perfectly. I enjoyed their spicy salsa so much that I didn’t even try their other salsas.

Yes! If you’re ever at Tlahco, do yourself a favor and get that Al Pastor taco; it’s truly a game-changer!
