California’s QuesaBirra Craze Hits Sonoma County and I get to see how it all started. In this vlog I explore some of Santa Rosa’s QuesaBirra Pioneers and take you behind the kitchen to see how these delicious tacos are made.

Uriel saw my Mitote Park video and asked if I wanted to join him and Neil Pacheco from What’s Cooking Sonoma County on a QuesaBirra Food Adventure. I gladly accepted his offer and when I showed up I got more than I asked for.

How QuesaBirra is Made

Our first stop was El Paisa Taco Truck in Roseland’s Sebastopol Road. There, Urial gives us a brief history of how QuesaBirra came to be. He also let me film how the QuesaBirra is made. El Paisa was one of the first places to make QuesaBirria tacos in Sonoma County.

At El Paisa, the QuesaBirria is made by warming corn torillas, dipping them in birria juice then placing cheese, birria and vegetables inside the taco. At the end, the tacos are smothered with more birria juice crisping the outside. You can see this in detail on the video.

After going to El Paisa Taco Truck, we met Neil on the West end of Sebastopol Road at Tacos Al Carbon. At Tacos Al Carbon we got to meet the owner and he took us on a tour of his restaurant’s kitchen. In his kitchen, he showed us how he makes his QuesaBirria tacos. He also shares with us why he started making QuesaBirra Tacos and how he first heard about them.

More than just QuesaBirra Tacos

You will find more than just QuesaBirria Tacos on Sebastopol Road. At El Paisa, you can also find QuesaBirria Ramen and QuesaBirra Pizza. I was a little skeptical about the QuesaBirria Pizza but it proved to be just as delicious as the rest of the QuesaBirria options.

El Paisa Taco Truck has a special relationship with the QuesaBirria Craze. The QuesaBirria saved them during the Covid-19 shutdowns. After being shutdown, they were going to call it quits and they started making QuesaBirra Tacos as a last ditch effort to stay in business. That risk paid off well and it makes sense why they’re still taking risks with new creations such as their QuesaBirra Ramen and QuesaBirra Pizza.

Who is Neil Pacheco & Who is Uriel Brena?

If you haven’t heard of them before, Neil and Uriel as both friends of mine. They are both adventurous influencers here in Sonoma County. Uriel throws huge parties, conventions and is also a political campaign manager. Neil Pacheco knows most restaurant owners in Sonoma County and has his own channel called “What’s Cooking Sonoma County?”.
