On this stop in our taco series, we headed toward the Sonoma County Airport to try Tacos El Angel. What started as a simple food truck visit turned into something much more. Behind the counter was an old friend I had not seen in years. Our families are from the same part of Mexico, and the second I took a bite, the flavors brought me right back.

The tacos here are more than just good—they are familiar. The grilled onions, the chilies, the way everything is cooked with care and no shortcuts. It reminded me of my mom’s cooking. Honest food. Humble ingredients. Big flavor.

The chicken taco was tender and clean, while the Al Pastor brought just enough spice without overpowering the dish. What stood out most was the balance—rich, bold, and simple in the best way. This is the kind of food that does not need to be complicated. It just needs to be made right.

As I talked with my friend, I learned he had also cooked at Los Plebes, another spot known for that rich, salt-forward flavor I love.
